Eat Beautiful: Kale Soup Recipe

He loves cooking so much that it’s almost impossible for him to choose just one recipe out of all the recipes on Eat Beautiful, but he uses one recipe in particular over and over again as a pick-me-up or “detox” meal. My kale soup is a skin-cleansing food version with delicious kale, fennel, green onions, and garlic and onions. kale soup

For 2 people
185 calories per serving

1 large fennel bulb, coarsely chopped
1 green onion (coarsely chopped)
1 tablespoon olive oil
1 tablespoon raw coconut oil
1 onion (chopped)
2 cloves of garlic (finely chopped)
1 tablespoon vegetable bouillon powder for 1 vegetable stock cube
10 kale leaves, large stems removed and coarsely chopped
a handful of spinach
sea ​​salt and black pepper
1 teaspoon grated nutmeg (as needed)

  1. Preheat the oven to 200℃/fan 180℃.
  2. Place the fennel and scallions on a baking tray or roasting tin, add the olive oil and toss to combine. Bake in the oven for 15-20 minutes.
  3. Melt the coconut oil in a large pot over low heat. Add the onions and garlic, cover the pot, and steam for about 5 minutes, or until the onions are translucent and soft.
  4. Pour 1.2 liters of water into a saucepan and add vegetable bouillon powder or stock cubes. Add the roasted fennel, green onions, and half of the chopped kale leaves. Season with salt and pepper and stir everything together.
  5. Bring to a boil and let stand for 20 minutes until bubbly. Add all remaining kale and spinach and simmer over medium-low heat for another 10 minutes.
  6. Let cool slightly, then puree using a stand-alone blender or stick blender until smooth. Reheat if desired, sprinkle with nutmeg and serve.
