Winter recipe: French onion soup

For 4 people
245 calories per serving

1 tablespoon olive oil
25g butter
700g onion (5 medium onions), cut into rounds.
3 cloves of finely chopped garlic
Vegetable stock 1.2 liters
2 tablespoons apple cider vinegar
sea ​​salt and black pepper

  1. Heat oil and butter in a large pot over high heat. Once melted, add onions and garlic. Saute for 5 minutes or until onions are browned.
  2. Reduce heat and simmer for 30 minutes, stirring occasionally. By then, the bottom of the pan should be coated with a rich nut-brown caramelized film.
  3. Add the stock and vinegar, stir well, then scrape the bottom of the pot and add the caramelized onions. Once it boils, reduce the heat and leave it for 1 hour. Season to taste before pouring into bowls.
