Spring cleaning isn’t just for your home. After a long winter, your skin may need a reset, too. This time of year, I like to pack lots of fresh leafy greens into my meals to promote my skin and overall health. That means salads are firmly on the menu. Green vegetables are a great source of age-fighting phytochemicals, so when it comes to anti-aging, it’s not just what you put on your face that matters, but what you put on your plate. Rocket is one of the most delicious ways to add a splash of greenery to your meals. So, in preparation for spring, I wanted to share one of my favorite rocket recipes from my book, Eat Beautiful.

Parsley is rich in vitamin K, mint soothes indigestion, and coriander helps lower blood sugar levels. Adding herbs to your leafy salad will increase the nutritional value of your meal.

Herbie Rocket Salad Recipe
material
4 rockets
handful of baby spinach
a handful of fresh parsley
a handful of fresh coriander
a handful of fresh mint
1 tablespoon sunflower seeds
20g shaved Parmesan cheese
1 tablespoon extra virgin olive oil
1 teaspoon balsamic vinegar
2 servings as a side dish
150 calories per serving
- Add all the green leaves and herbs to a bowl and mix.
- To serve, sprinkle with sunflower seeds and parmesan shavings and toss with olive oil and balsamic vinegar.
