Sometimes your body craves sweet things. Usually when your energy levels are low and you feel tired. When I’m busy or working out a lot, I like to have Date Energy Bites, made with recipes from Eat Beautiful, on hand as a healthy alternative when I need a quick pick me up.

Dates are in season in the fall, so they’re usually reserved for this time of year in my seasonal eating philosophy, but if you have some in your cupboard at the store, they’re great to have at any time. Dates are also a great natural alternative to refined sugar. My Date Energy Balls are super quick and easy to make and taste amazing. Still, it feels like a luxurious snack.

date energy bite

There will be 10 pieces
160 calories per ball

120g pitted dates
Dried apple rings 120g
120g unsalted dry roasted almonds
120g gluten-free rolled oats
1 tablespoon maple syrup
1 teaspoon cinnamon powder
A handful of finely chopped pistachios

  1. Soak dates in boiling water for 10 minutes until soft. Drain and squeeze out the water.
  2. Place all remaining ingredients except the pistachios in a food processor, add 1 tablespoon water and blend until the mixture forms a sticky dough-like paste. If necessary, add another tablespoon of water to loosen it further.
  3. Scoop 1 tablespoon of the mixture and roll into 10 balls with clean, wet hands. Place the pistachios in a bowl and roll each ball in the nuts to coat.
  4. Store in an airtight container in the refrigerator or freezer.
